Make carrot patch cupcakes!

Follow the instructions to make super-yummy carrot patch cupcakes, perfect for a weekend treat

What you’ll need…

  • cupcake tray
  • cupcake cases
  • two mixing bowls
  • small bowl
  • greaseproof paper
  • rolling pin

For the cupcakes…

  • 150g self-raising flour
  • 50g cocoa powder
  • 200g caster sugar
  • 100g unsalted butter, room temperature
  • one large egg
  • 100ml whole milk
  • ½tsp vanilla extract

For the buttercream…

  • 165g soft butter
  • 300g icing sugar
  • 35g cocoa powder
  • 2–3tbsp milk
  • ½tsp vanilla extract

To decorate…

  • 60g Oreo biscuits
  • 12 strawberries
  • 200g white chocolate
  • orange food colouring

Step one

Ask an adult to preheat the oven to 180°C, and then line the cupcake tray with 12 cases.

Step two

Beat the butter and caster sugar together until pale and fluffy.

Step three

Crack the egg into the butter and sugar mixture along with the vanilla extract, self-raising flour and cocoa powder, then beat until well combined.

Step four

Divide the mixture evenly between the cases and bake in the oven for 20 minutes, or until golden. Then place on a rack to cool.

Step five

To make the buttercream, beat the butter and then add the icing sugar, cocoa powder and vanilla extract. If the mixture is too thick, add a tablespoon of milk to soften it.

Step six

In the microwave, gently melt the white chocolate and mix until smooth. Add the orange food colouring until your mix is the perfect carrot colour!

Step seven

Dip each strawberry into the melted chocolate, leaving the green top uncovered. Place the strawberries on greaseproof paper and put in the fridge to set.

Step eight

While the chocolate sets, crush the Oreo biscuits to a fine crumb using a rolling pin.

Step nine

Cover the cupcakes with the chocolate buttercream and press each cupcake into the Oreo crumbs.

Step ten

Pop a decorated strawberry on top of each cupcake, then tuck in!

TOP TIP
